Winter brings cooler weather, a bit of rain, and of course, less daylight than usual. This is a perfect recipe for those cold winter nights, calling for ease, warmth and soul nourishing goodness.
A simple, hearty lentil soup that can be enjoyed alone, or with some delicious crusty sourdough bread.
Ingredients
1 brown onion chopped.
2 large carrots sliced
4 garlic cloves minced
1 ½ cups of dried red lentils
4 cups of veggie or chicken broth (try Gevity body glue)
1 cup of water
2 tbs of tomato paste
1 tsp of salt
1 tsp ground black pepper
3 tsp ground turmeric
1 tsp ground cumin
2 tsp fresh grated ginger
1 small bunch of kale stemmed and roughly chopped
1 cup of coconut milk
1 tbs of fresh lime juice
Method
Place the first 12 ingredients into slow cooker. Stir well to combine.
Cover and cook on low 6 hours, until lentils soften.
Turn off heat and stir through kale, coconut milk and lime juice.
Cover and let stand for 15 minutes.
Spoon into bowl and enjoy!
